In the Ecuadorean town of Baños, street vendors roast and serve Cuy, or Guinea Pig. Considered to be a delicacy in Peru, Ecuador, and Bolivia, Baños proudly boasts its Cuy is the best in the world. I waited and watched as the vendor served up slices to a group of hungry looking locals, politely declining a small piece to taste. (I had a Guinea Pig as a childhood pet!) I finally gave in to the pressure and had a taste, and, yes, it was the "best in the world"!
